I absolutely L😍OVE pasta! Sometimes, a little too much, so every now and again, I’ll sub out traditional pasta for “Zoodles” (zucchini noodles) or Spaghetti Squash. I also love veggies, so it makes for a great substitute for me. Give it a try with any of your favorite recipes, you may be surprised as to how good it really is! 😉
First way: Zucchini Noodles, or “zoodles” are made with a handy kitchen tool I picked up called, a Zoodler! You can’t make this stuff up…lol! I found mine at BB&B. It’s super easy to use. Just wash your zucchini (about 1 per serving will make a good amount of “pasta” for a dish, and I sometimes mix yellow squash in too), cut your ends and twist them through the handheld gadget. From there you can eat them raw, or my favorite way – sauté down some chopped onions and minced garlic in butter and EVOO and then toss in your zoodles and cook for about 3-5 min.
Second way: Spaghetti Squash – it literally shreds apart like Spaghetti noodles. Preheat your oven to 375. Cut about an inch or so off each end of your squash. Now cut it in half lengthwise. Clean out the inside seeds with a spoon and discard. Lightly drizzle the inside flesh of both halves with EVOO, and season well with salt and pepper. Place the halves with the oiled and seasoned sides down on a baking sheet lined with foil. Bake at 375, for about 40 min. Wait a few min for them to cool and then flip them over, so the seasoned inside flesh is facing upward. Take a fork and just drag it across the insides of the squash. You’ll see the “Spaghetti” magically appear. Then, just toss with your favorite spaghetti sauce! 😊
