Cajun Shrimp Tacos with a Black Bean and Corn Mix and Cilantro Lime Rice

I absolutely love Wahoos Fish Tacos, and since we don’t have one here locally to stop by and grab one when I want, I make these, inspired by their food. 😊

Prep Cajun Shrimp:

Clean and peel 1 lb of raw shrimp.

Toss shrimp in a bowl and coat them with about 1 Tbsp of Cajun seasoning (you can use as much or as little as you’d like), cover with plastic wrap and set in the fridge to let the favor set in a bit.

Cilantro Lime Rice – I totally cheat and use 5 min rice here! I add 2 cups of water, 2 tsp of my chicken flavored boullion, about 1 Tbsp of butter, and lime juice (anywhere from 1/2 a lime to 1 whole, depending on how juicy they are). Then, once it boils toss in the rice and set aside. Mix in 1 Tbsp or so of cilantro before serving.

Black Beans & Corn – Add 1 (14.5 oz) can of black beans and about half of 1 (8.5 oz) can of corn to a small sauce pan. I like adding less corn because it’s so small. If you add the whole can it’s just too much corn. I then season (which isn’t necessary, but I like the added flavor) with about 1/2 tsp of cumin and 1/4 tsp of chili powder.

Sriracha Mayo – in a small bowl add about 2 Tbsp of mayo and 2 tsp of sriracha (more or less, if you’d like) and then a squeeze of lime juice. Mix it well and set aside.

Partially Fried Tortillas: I like to pour, at most, 1 Tbsp of oil in a sauté pan and also coat the tortillas in a small amount of oil with a brush on each side. Set them in the hot pan and kind of swirl them around a bit, just long enough until they begin to brown and flip them. Then “fry” the other side until just starting to brown. This way they don’t end up greasy, but still soften. Then place them between napkins/paper towels to sop up any left over grease.

Cook Cajun Shrimp: Grab your shrimp from the fridge. Heat up a sauté pan with about a Tbsp of olive oil and toss them in. Add a squeeze of lime juice and cook until just pink. When done, place them on a cutting board and chop a bit for a smaller bite size.

Build your taco: tortilla, a spread of sriracha mayo, shrimp, cabbage mix, cheese, green onion, cilantro.
