I really love my own cooking…lol! And for the most part it works out great – I cook, my hubby cleans and we all get to eat good food! Sometimes, it does have its disadvantages tho…like on a day when I’m not feeling all that well, but I really want a batch of MY own homemade soup…🙄 so, I made the soup…💁🏼‍♀️

1 large chicken breast

1/4 onion, diced

1 tsp garlic diced cloves

1 stalk of celery, diced

Handful of baby carrots, diced

6 cups of water

5 tsp chicken bouillon

1 bay leaf

1/2 tsp dried rosemary

1/2 tsp dried thyme

1/4 c Lemon juice

2 c small pasta, cooked

1. Cut chicken breast into small bite sized pieces. Season with salt and pepper and brown in a pan with EVOO. Set aside.

2. In same pan chicken was in, add a Tbsp or so more of EVOO. Once hot, add your onion and cook for 2 min. Add in your garlic, celery and carrots, season your veggies with salt and pepper and cook 2-3 more min. Add in your water, your cooked chicken that was set aside, and the rest of your dried seasonings. Bring to a boil and the simmer for 10-15 min.

3. Add your cooked pasta (I typically use ditalini or orzo) and lemon juice. Serve immediately. *feel free to add in some NM hatch green chili or sriracha in your bowl for an extra boost of yum, I always do! 😉
