3 large potatoes, whole & unpeeled

3/4 c mayo

1 Tbsp yellow mustard

1/4 onion, diced

1 stalk of celery, diced

1 (2.5 oz) can of sliced olives

2 hard boiled eggs, diced

Salt & Pepper

First thing first – leave your potatoes whole and with the skin on while you boil them! I’ve heard soooo many stories of people peeling and/or cutting potatoes beforehand – just trust me and don’t do it! Boil your potatoes (whole and skin on) for about 15-20 min, watch them closely and take them off of the heat and drain them as soon as they are fork tender (you can easily stick a fork in them without being too mushy). Let the potatoes cool completely!!! Then, you can peel them and cut into bite sized chunks. The rest is simple – mix it all together and set it in the fridge until you’re ready to serve! 🙌🏼
